Basic Peach Muffins
1 1/2 cup flour
3 teaspoons baking powder
1/2 cup margarine, room temperature
3/4 cup sugar
1 egg, at room temperature
1 teaspoon vanilla extract
1/2 cup plain or vanilla yogurt
1 cup chopped peaches (frozen, fresh or canned --well drained)
Preheat oven to 400.
Sift together flour and baking powder. Set aside.
Cream margarine, then add sugar and beat until light and fluffy. Add egg and beat well. Beat vanilla and yogurt into creamed mixture and stir in flour mixture. Chop peaches into small pieces, about 1/4-inch in thickness. Add fruit to mixture and stir briefly to blend. Drop by spoonfuls into well-greased muffin tins.
Bake about 20 minutes..
Makes 12 muffins.
